2 conflicting explanations presented in this thread

both consistent with what was listed in the op

so that's the official tamu position, only interested in maintaining the bizarre custom and completely unconcerned with making the lsu game a thing?

I can't give you the official TAMU position; I can only give you mine.
I suggest you contact the university and/or the athletic department, if you're looking for something formal.

It's part of their tradition. They are used to play a Thanksgiving night game every other year against the team that is their rival. The proximity and history between the two schools places LSU in the "rival" slot for A&M every other year.
Just the same way our fans enjoy Saturday Night in Death Valley, A&M enjoy Thanksgiving night games at Kyle Field. It's tradition for them.
