I'm not sensitive or allergic to gluten. I cut it out of my diet and felt a lot better by doing it.
it's just pretty much impossible to sustain because, like was said in the op, so many foods have gluten in it.

Well, with wheat comes carbs and reducing them is a good thing for most Americans. We simply eat too much carb-rich foods. Fat-rich foods are also responsible for the incredible average daily calorie intake by most people.
Gluten, however, is a protein. Americans, especially women, don't get nearly enough of this vital nutrient from their diets. If you're severely reducing your intake of wheat-containing products, you should be sure to include other grains so that their forms of proteins are available to your body.
Raising the amount of protein and reducing carbs and fat would benefit some 70% of Americans who are overweight or obese.
