As others have already said, the Ozarks. Doesn't matter where, every part has unique beauty. Southeast Missouri has elephant rocks and Johnson shut-ins which are awesome:
Southwest Missouri has a lot of great scenic creeks and rivers which are great for floating, fishing, camping, and other recreation:
And for the sake of adding something that most people don't consider when they think of Missouri, the swamps and cotton fields are unique as well:
Southeast Missouri was essentially a giant swampland until roughly a hundred years ago when they drained a lot of them to create fertile cotton growing fields. There's still a bit of swamp left though.
and of course there's the skylines of Missouri as well
