Our "run heavy" offense is the reason he sees single coverage on almost every play and allows him to run by a college level defender.

Yeah, OK. Thats the "reason". The reason why Coates beats guys is because he is too big and physical to jam at the line, and too fast to give a cushion. He's spent two seasons just running past guys because he is incredibly hard to cover down the field. Even when he drops the ball or misjudges its flight path, he still beat his guy.

If you're relying on doubling him, then that just means that there is a hole elsewhere in the defense. No one can double a receiver all game long because they'll get killed doing it. An NFL team will put up with the inconsistency because his parlor trick is insanely valuable. Possession receivers are a dime-a-dozen at the NFL level; the guys that are big and physical with the ability to take the top off the defense are always in high demand.

Maybe he flops, its possible. But he'll get paid doing it.

See Carolina putting up with Kelvin Benjamin catching 52.3% of the balls thrown his way and running poor routes.

I don't think anyone is saying he'll flop. Or that he shouldn't declare. I and others just don't think he gets drafted in the first. I think he should come out regardless but 2nd round is much more likely imo.
