They mostly just have one bye week now.
It has to do with when labor day is. When the season starts in August, they need two bye weeks or else the SEC Championship Game wouldn't be in December.

Take note that Alabama plays on the 5th of September. Which means our "bye" for lack of a better word, is technically before the season.
