Why is it that the UF game defines his abilities and West Virginia (or any of the other games for that matter) are irrelevant?

He had a great game. I'm not crowning him champion of shite after a single game.

This is what makes coaches like Saban so brutal to play against. He is the Bill Belichick of the college ranks in that he can win in every way and will adapt his coaching style to whatever talent he has. I hope Sumlin can reach that level, but there is a reason why Saban is a master at what he does whereas other coaches never change their style and fall behind the curve.
