But wouldn't the sauce just be called barbecue if that were the case? And you don't cook the sauce in a barbecue pit, or on a barbecue... and making it isn't called barbecuing.

I agree that the sauce you put on top of the barbecue does add immensely to it, but the meats the... well meat.

It is called BBQ sauce. The apparatus we cook the meat on is not called a barbeque, it is a grill or a smoker. If you just grill some meat, with no sauce or rub, it's not called BBQ. It's just grilled meat.
