They can play a tough OoC schedule in basketball and essentially take the rest of the season off until March. I think they would stay for the same reason FSU remained in the ACC, they have a much easier championship path.
Normally I would agree, but because the NCAA tournament lets 68 teams in, and this is largely based off RPI, basketball programs don't need an easy schedule to win a title. Most are doing everything they can to build the toughest schedule possible. The SEC actually brings down UK's RPI and gives them bad seeds.
Football, unfortunately, rewards whoever can go undefeated with an easy schedule. It's all about record, not quality wins. The ACC or Big Ten would boost UK's basketball RPI and fan experience, while also providing the easy schedule needed to build a relevant football program. Stoops could build a top 25 caliber football team right now in terms of talent and it will still be no better than Miss St's program due to the competition of the SEC.

It would suck losing Kentucky. They are a charter member and yes Florida is good in basketball (mainly due to Donovan). If we would lose UK, we'd be losing our only basketball power.
