Obvious one is Petrino, though he didn't exactly leave on his own terms. However, though we wouldn't have been this bad the last 2 years with him, his recruiting would have eventually caught up with us.
As for the last few decades, I'd say Ken Hatfield. Him bolting for Clemson forced us to make a rash hire of Jack Crowe and walk into the SEC with an inexperienced head coach.
