Came from awhile back when A&M played TCU on a regular basis. According to the story, a yell leader told the students that the Ags were gonna "gig the hell outta the horned frogs," and pantomimed holding a frog gigging spear, which ended up looking like the thumbs up sign.
Interesting side note: the other SWC schools such as baylor, texas, and texas tech adopted their hand signs afterwards largely in response to the popularity of A&M's.
