BINGO. There's your answer.

When these deals are made they are in concrete. If one of the conferences TV partners tells you to play at midnight then, as a member of the conference that has a contractual obligation to said network, then you do it.

The networks try to maximize eyeballs and set their schedule according to how they feel. You or I may not agree but we don't write a 200 million dollar check.

Oh, and by the way, this is a residual of the 1984 ruling of UGA/Oklahoma vs the NCAA that nobody saw. Yes, now the conferences are free to negotiate with whomever they want but the tradeoff was you now have no say to your timeslot whereas before, you could say we're playing at night, as LSU always did, if you want to televise, here we are and any network could come.
