Because it sets up the SEC to have 2 teams in the SEC Champ game and 1 or 2 teams with 1 or 2 losses to get at large bids for playoffs.
By creating a semifinal for the SEC championship game you give 2 of your top 4 an extra loss which hurts your chance of getting 3-4 teams in the playoffs

This is true
Which is why you only want to have a single championship game and not three of the four better teams ending with a loss
