Wednesday. Family wanted to go tonight - they were extremely short staffed and there was a line out the door. The servers who did show up for their shifts were hustling their butts off. What a crappy thing to do them right before Christmas.

Baked Squash like Dixie Cafe’s

5 lb yellow squash
2 eggs, beaten
1 cup bread crumbs
2 tbsp chopped onion
1 stick of butter or margarine, softened
1/4 cup sugar
Salt as needed
Dash of pepper
Additional bread crumbs for topping

Trim squash and cut into large pieces. Drop squash into large saucepan with enough boiling water to cover. Return to boil; reduce heat and cook until tender. Drain in large colander, then mash.

In large mixing bowl combine squash with eggs bread crumbs, onion, butter, sugar, salt and pepper. Turn into 3 quart casserole that has been lightly greased/sprayed.

Cover with light layer of bread crumbs. Bake at 350 until lightly browned. Makes 10 servings.

(Pretty sure I’ve cut down on butter before but ya know...)

It's been a rough couple of months for Central AR restaurants - Cock of the Walk, Dixie Cafe, Mimi's Cafe, and AR Burger Co. have all shut down.

That CotW cole slaw...

Oh no I didn’t even know about that CotW. We used to always go there with my grandma for birthdays

Well we’d go there or to Cagle’s Mill in Rsvl, which is still there and was pretty good when I went last but very different than 20 years ago or so.
