on occasion I've seen Jenkins actually break through the OL and give chase to the QB. Is this what he's supposed to do?. It would seem that if he gives up the middle, he's setting us up for a screen pass, or some kind of misdirection running play.

The first priority of the nose in the 3-4 is to occupy space/blockers to shut down the middle, essentially making the area from guard to guard a "no run zone" for the offense. However, he's still a lineman and he's always going to be trying to get pressure on the QB. If a center immediately releases and leaves the DT free, it's only natural for him to rush the QB. He's not just gonna stop and start running laterally. And as you said, several times he'll pursue the QB and put pressure on them so it's definitely not a bad thing.

If he reads pass he rushes.

Most defensive lineman cannot do this but......If he reads that it is a screen, redirect latterally towards offensive back/receiver to make a play. I've seen it coached that way.
