A riddle..

This version will be a bit of a scavenger hunt without a whole lot of rhyme or reason. Contained within each answer I'll ask for a letter...at the end you will take all the letters which will then be rearranged into an acronym that should be known to the board.
ETA: I tried to bold the underscores I want but it didn't do it, so instead I will put a triple underscore for the letter I want. Note that a triple underscore is just 1 letter, and only for formatting purposes and make it easier to see.
-In the '84 Cotton bowl against Texas we had a player recover a late punt. That player's name is an anagram for an unappealing vegetable, otherwise known as a: _ _ _ _ _ / ___ _ _
-The last 3 letters in the above answer can be rearranged to say who the free games are for, according to a mid/late 1960s psychedelic rock lyric from a band from Europe. That lyric is from a song called ___ _ _ / ___ _ _ _ _ / _ _ _ _
-The album that song comes from signaled the beginning of a new day so to speak. The first word of the title of that 6 word album is _ ___ _ _ _
-The penultimate letter of the above answer will also be contained in this answer and noted with an X (note: the letter is not actually an X, simply noting that it's the same letter as the 4th letter above). We're looking for a UGA QB in the 1990s that would not play a down for us, but end up finding success at another major program including winning a conference title and major bowl game. _ _ _ X / _ _ _ _
-The player above did not leave much of a mark on our program but is from here and has returned. He founded a restaurant in state named ___ _ _ _ _!
Take the 6 letters found in the answers above and then rearrange them to come up with our final answer:
_ _ _ _ _ _
Rules as conveyed by the great elders:
1) quality guesses receive a hint
2) the person that solves has to create the next riddle

This is awkwardly worded, wouldn't you just say "plant"?

There's still only five triple-underscores

There's 5 underscores and an x.

I have the first four letters. I don't understand the UGA QB clue as there is not Long letter space for a letter?

the X is a placeholder for the fourth letter of that first word. Think of it like a space for the purpose of figuring out the answer.
What's the first four letters you figured out?

Awesome. And yes I'm aware. And if you know those, id think you can work backward to find the first answer

I have the 5 letters. The other is an X or is the letter the X represents?

From the post:

Where the X is is basically the same as a triple underscore and the letter were looking for. I just decided to do it this way to give a small hint in saying it's the same letter that was found in a previous answer rather than a complete blank.

I think I have all of the letters, but I can't figure out the acronym

When you do figure it out it'll be cause for celebration

I have 3 vowels and 3 consonants. One of the consonants is probably obvious. And I on the right trail?

3 vowels and 3 consonants is correct

I am at a deadend. I won't give the letters up, so others can do the work. I will keep noodling on this. A six word answer in 6 letters that should be familiar. Hmmm

Our 3rd president may provide some guidance

I have five of the letters. I'm stuck on the QB name. seems like a unique name based on one of the known letters. But googling isn't helping much, and I'm a little too young to have remembered it happening back then.
