You will need to strap yourself in that you won't find any decent Tex Mex. Personally I would go to HEB and stock up on the pre made fajitas and carne guisada as well as the refrigerated tortillas and stock up. Freeze them and get enough to make it through until your next trip to civilization.

Same thing with brisket but you said that isn't an issue for you. They haven't discovered the joys of smoking beef in South Carolina for some reason.

Personally I love the mustard bbq but hate the vinegar. If you can find a place that lets you put on your own sauce that's also a big plus imo. Way too many places down there bathe it in vinegar sauce and I just don't get that. Properly cooked pulled pork is wonderful on its own.

It's a great state and a great place to live outside of that. A lot slower paced than DFW and Texas in general and a lot less transient. Most people have lived there for generations and have deep roots. The SC beaches are gorgeous. Not the white sugar sand or super clear water but a true natural beauty and some real waves. It's also inexpensive and the people tend to be very friendly so long as you are friendly as well.

The biggest thing to me about SC is how green it is. Anything grows there and the produce is fantastic. You don't have to water everything just to get it to grow like you do in Texas. I wouldn't worry about the heat, it's nothing compared to Houston though it's stickier than DFW. You'll be fine on that. Another nice plus is you are within driving distance of DC and the East Coast as well as Florida and the mountains. Lots more accessible scenery by car than DFW. In Dallas you have to drive a long way to the mountains or even a very mediocre beach.

I'd go in a heartbeat if I were you, just make sure to prepare for the Tex Mex thing.

Realizing this is a huge long shot, but any sort of dance scene there?

Pretty pedestrian, would not count on it. Do you have other options?

Trolololo

When the frick have you tried dancing in Columbia, South Carolina? What a jackass.

Anyway OP, here is some good info on different bars in the Vista and 5 Points. LINK Tin Roof, Jillians, Red Hot Tomatoes, World of Beer, Moda Lounge, and many many others offer what you're looking for and more.
Just be prepared to have to learn the Shag, the state Dance of South Carolina. Don't worry, you can find a nice girl and get free lessons.

A lot has been covered in this thread already about Columbia. Some of the key points I agree with:

5 points is good if you're under 30, single and looking to get some college tail.

If you're 30 or over, the Vista has a lot of great places and the crowd is more "young professional."

There are also some decent bars and restaurants around town and out in the burbs. There are several good BBQ places (but not the brisket kind.) Palmetto Pig is right downtown by The Colonial Center.

Columbia is a decent enough size city that it's a draw for concerts, either at the Colonial Center, Township Auditorium (I saw an awesome Blues Traveler Show and seperate Allman Brothers concert there) as well as larger concerts at Williams Brice (I saw the Rolling Stones and Farm Aid years ago there.) Furthermore, you're a 2 hour drive to the Verizon Amphitheater in Charlotte (they have a good summer schedule usually.) You're also about 3 hours from Atlanta.

Location is one of the best things about Columbia. You want to go to Charlotte for a pro game, it's about 2 hours. You want to go to the beach, it's about 2 hours. You want to go to the mountains, it's about 2 hours. You want to go play golf, you're probably 20 minutes from a course no matter where you are. You want to go to the lake, it's right outside of Columbia. You want to go fishing at the river, there are 3 just outside downtown (and lake Murray is known for bass fishing.)

There are public, private and gentleman's clubs in various areas of the city. Generally you'll find southern hospitality wherever you go, just don't go looking for it where you wouldn't find to expect it.

The airport does a lot of connections through ATL and CLT, but there are several regional lines that come through that are direct.

The universities/colleges and Fort Jackson keep a lot of the nightlife around Columbia rather "young."

Columbia is what it is, and it is what it ain't. It's a mid-major southern city with a lot of "things to do" with an above average geographic location to do activities outside the city (like a reasonably short drive to another city, beach or mountains.)

Also, the cost of living is very reasonable and it effects just about everything you buy. SC has one of the nation's lowest gas taxes. Also, water and electric are cheap, but some of the highest quality products/services when compared nationally. (Literally, just last year Columbia was voted to have the nation's best tap water...print da shirts.)

*This* isn't even an option yet. Just the only out of state job I'm looking at at the moment so I wanted to check out the area. Sounds like I'd miss a few things but generally like it there.
