Stats question regarding sacks

If a defender has a bead on the QB and the QB chooses to just drop to the ground and "take the sack" before being touched, does the defender get credited for a sack?

Anytime a qb falls untouched the closest defender gets the sack credit

No. The zebras will blow that little whistle, move the ball back to the original LOS, and the closest defender will then be flagged for a personal foul w/ targeting and be ejected from the contest.
