Coastie, do you start your etouffe with or without roux? I have always used a roux but saw 2 recipes today that didnt.

I make a roux. I make my own roux for gumbo and étouffée. Mom uses roux from the jar and it is ok. How does the gravy thicken without a roux in the étouffée?

I agree and thought it was strange. They called for a shite ton of corn starch.
for thickening. To me the roux is THE base flavor étouffée and gumbos. You build from there.
