You can have as many as you want count back to the previous year as long as the guys you had and the number you want to count back, doesn't exceed 85. There is not a limit of only 5 Early Enrollees counting back that is mentioned in the bylaws that I saw.

Last year, tenn found a loophole about getting people to sign financial aid documents early, before Dec 1. This allowed them to have unlimited contact with those recruits and double dip on counting back scholarships. They will be at 85 scholarships for this season, but they had to do a bunch of processing b/w Dec and now.
