Do it opening weekend:

Duke (or Wake Forest)/Vanderbilt
Florida/Miami
Louisville/Kentucky
North Carolina/South Carolina
You can still have the traditional rivalries Thanksgiving weekend.

These make sense. For some reason, I'd like to see VT/UGA as well, although VT isn't very good right now.
