A couple of backs and a tight end with great hands:

Dalton Hilliard
Sammy Martin
Brad Boyd

Maybe not full time, because they were so short(well Dalton is), but these guys could have played receiver - and without question could have in a lower division.

Martin was often the fastest guy in the stadium, and Dalton was so quick - his routes weren't necessarily razor sharp, but he got to his spot and was reliable in making a catch. In 1989 he caught 52 passes, for 514 yards and 5 TDs - in the NFL for the Saints. Martin actually played some WR in the NFL, although he was primarily a special teams player.
