LSU was 4-7 and 3-8 the two seasons before Saban arrived. Dinaro had recruited well, and even had some good seasons from 95 to 97, but when Lou Tepper came in as DC the defense fell apart and the bottom fell out.
Compare that to A&M, who was 9-4 and a Cotton Bowl team in 2010 and 7-6 with a bowl win in 2011.
Arguably, A&M is in a better position than LSU was when Saban came in. Of course, the tricky part about LSU is that Dinardo actually left Saban a lot of talent, but Tepper wasn't using it properly on D.
