I want to say Mythbusters busted that myth. After a little while the players learn how to shoot for the inevitable small gaps while the big guy has too much bulk to react.
But as to the 7ft tall WRs... I know of at least one that 6'10". And of all the places he played at Army.
Alejandro Villanueva is an interesting character. He was born in the US while his dad, a Spanish Naval officer was assigned here. He was... an interesting weapon at Army. Not a great, or very good WR, but he could get up there to get the ball. He did three tours in Afghanistan as an Army Ranger, came back to the States, put on some weight, and then spent 7 seasons playing in the NFL as an offensive lineman. His younger brother, Inaki, played for the Spanish international rugby team.
