Last minute addition... some chicken breasts are being defrosted, they'll be smoked with apple wood for a little while then grilled off. Then they'll be diced into yellow curry chicken salad with Dukes (we call it Chicken Dubai), stuffed into pita bread. Pics later.

Chicken Dubai ™




Chicken breasts.

Lots of apple smoke for about 25 minutes.





































Then you put them on directly over the coals and grill them off. Because there is no marinade with sugar, just a little salt and pepper, you don't get the black char look. Nice and golden brown. Once they are browned, move them back to the side and bake them off.























Ready for dicing...

I just dropped in on the tiger droppings food forum, which usually has some righteous topics, but this weekend theyve got jack shite on this thread.

All the food in this thread be looking good.

I kept it simple for tonight by smoking some chicken wings for 2 hours @ about 275F.

About 250 degrees for 4 hours. After 2 hours I wrap in foil with Apple juice for an hour, then finish uncovered the last hour. Sauce for the last half hour or so. Should look something like this....
