yeah that looks perfect for me. you have to cure it? or were those figs in the demo just talking shite? The weber loooks cool but complicated.

Also, went to the Augusta farmer's market for the first time this morning, and it was actually pretty cool.

The egg is great. The price is steep, but it has a lifetime warranty, that's how I justified it. Over 10-15 years I'd spend just as much on other grills or smokers. As far as pork butt, adjust to approximately 225-250 and pass out.

Yes.. cure it.

Becareful with the smoke at first... in other words, if you are cooking a butt for 7 hours, you do not need to see the chimney billowing smoke for 7 hours.. be more concerned about maintaining temp..

We do not travel downtown often but I will have to check it out next time with your recommendation.

yeah I got a lot to learn about the whole smoking process. Pretty much starting with zero knowledge.

But yeah the market was cool, man. I think it is every saturday. you canbring your dog, and they had a flowing well for the kids to run around in. One tent had a black family selling fried fish, grits, fried tomatoes and the like. I plan on trying it next time I'm there. would definitely recommend

yeah, i guess the smoke billowing out of the cracks was not suppose to be there in that demo? thanks for the tip.

This is what you don't want to buy, imo. In fact, tHis is exactly what I was talking about in my previous comment.

K9, If you want to do overnight hands-off butts like bwood does on his BGE, look into the Weber SMokey Mountain....

It's fail safe.

Once you've got a handle on the smoker you can add a burner to the fire box & have the perfect grill.... I had the opportunity to tour Sconyers BBQ once & I learned they (and many others) use this method to finish off their meat..

If you want a good smoker at that price you really need to look at the Masterbuilt dual fuel (propane and charcoal) smoker. I have one and it is fairly easy to use. I've modified mine some to include a smoke generator to infuse more smoke into the smoker. Starting out a propane smoker (with the option of using charcoal as well) will be easier to use. LINK.

I also use an offset wood barrel smoker and have for many years but it just takes more tending to and is harder to regulate.

One watermelon, a case of Bud Light, and some McSnoot Ales for the brother-in-law (Full Sail IPA, and Terrapin Rye)......














(Left) The rub is Basic. Equal parts cayenne, paprika, mustard, garlic powder, onion powder, pepper, salt, cumin, and then some brown sugar.

(Right) Two jars of family recipe bbq sauce. All I'll say, is that it's a tomato based vinegar and pepper sauce.











Vinegar Slaw..................Nothing fancy. Shread some cabbage, bell-peppers, onions.....Just Kidding......Buy a bag of pre-shredded cole-slaw......and then boil some cider vinegar/sugar, oil, ground-mustard/salt/pepper.....and pour it over the slaw and stick in the refrigerator over-night.










Will rub these racks down after Church tomorrow.



And, then we smoke.............
