The first question before evaluating BBQ to me is if the person evaluating it mentions sauce. If your BBQ requires sauce it is automatically disqualified as mediocre. Sauce in and of itself is not a bad thing but the meat must stand on its own whether it is brisket or pork or ribs (beef or pork). The sauce should be an added flavor profile but if it is a requirement or is added to the meat then it is about the sauce, not the BBQ. Chicken and mutton are BBQ but they simply will never compete with beef or pork taste wise so it is irrelevant.
Beef is absolutely BBQ. Simply because most Southerners have never had properly cooked brisket doesn't make pork "real BBQ". It takes true talent to make a brisket properly but the reward is so great. Great pork will lose to great beef virtually every time, the trouble is that brisket is much harder to cook properly than pork and many people get caught up in the sauce which is an even greater mistake. A properly cooked brisket should make you hesitate as to whether you would rather eat the brisket or a filet. It should be firm but able to be easily pulled apart with your fingers and then melt in your mouth.
Personally I think Memphis is the most overrated BBQ because far too much of it is doused in sweet sauces. The ribs are generally good there. South Carolina is hit or miss depending on the region and place, far too many places there also mix in the sauce with the BBQ.
In Texas the best I have had is at Snows in Lexington. Franklins in Austin is right there, they are one of the very few BBQ restaurants that use Prime beef. Lockhart and Luling have several good places between them and Fargos is the best in BCS.
If you don't think this is BBQ though I just am sad for you:

yeah, cause nobody in TX does pork. lol. Dude, all the places mentioned in TX do pulled pork as well. But it's not the best thing on the menu, because a great brisket is better than anything else.

Have you been to STL in the past few years? Pappy's, Bogart's, and Adam's are great. They may not be as good as KC classics, but they are very good BBQ joints.

I always get the filet medium rare. It's incredible.
My dad and brother always make fun of me because they get these massive porterhouses or t-bones. If I go to Doe's I don't want to puke my food back up. I want to enjoy it.

This right here makes everything else you say absolutely irrelevant.
You don't know what you're talking about.
Memphis style BBQ is dry rub. No sauce is on Memphis BBQ unless the person eating it puts it there.
