It's funny how Texans say this, yet nearly every damn barbecue restaurant in Texas serves sauce. And ALL of the Texans eat it.

The only thing that truly stands out about Texas barbecue is the hotlinks.

Not all of us eat it and I can take you to any number of places that if you want sauce you will be out of luck. Yeah some of the old time joints have sauce in them now but it's because all of the non natives that keep moving here demand it. I can't fault these places for doing it, you gotta give the customer what they want even if it's wrong.

Carolina for pulled pork.

Texas for Beef BBQ (and it is BBQ, Memphis snob).

The point is certain regions have certain specialties. No one region is the best at the art of smoking meat, but some have mastered certain cuts more than others.
