Agreed. As a child of the south, I have an odd affinity with the Texan perspective on BBQ. Beef or Pork. Sauce shouldn't be there, though a good Carolina vinegar based sauce over pulled pork is nice. Cuts the sweetness a little.

I equate pulled pork to chopped beef and yes they are the only acceptable ways where sauce is ok.

I would say Texas but Texas isn't "Southern" so please exclude TX from these lists everyone.

A good cut of brisket put over smoke is why God made wood that can burn.

It's BBQ as it is meant to be.

I don't get why people get so pissy over pork vs beef. Both can be great if done right.

Can we all agree that Alabama white sauce is disgusting? Leave it to Alabama to put mayonnaise on BBQ...

If you ask for a BBQ sandwich anywhere, it's pork. Pork is BBQ. Other things are barbecued.

This really isn't even up for discussion.
