A lot of sources will say to use cheese cloth as a cover. Use paper towel. It helps keep fruit flies out.

I used a coffee filter held in place with rubber band. My scoby went kaput a year or so ago. don't know what happened, just would never brew properly.
I used mainly ginger or cranberry juice for 2nd ferment, nothing too exotic.
