OU and USC got the nod because they were pre-season 1 and 2. OU was overrated in weak league, the SEC HAD 4 TOP 15 Teams (5 of AU wins). AU was penalized due to a loss to USC in 2003 and because they had to play the Citadel due to a last minute schedule change.

I don't recall anyone calling the '04 OU team the best ever. I heard a lot of ESPN and other media people saying that about the 2003 OU team that got exposed by Kansas State. And didn't Texas barely beat Michigan in the Rose Bowl? I recall them needing a game-winning FG drive as time expired.
2007 and 2010, if anything, were seasons that really needed playoffs. There's no way LSU and Auburn were the best.

The Big XII in 2004 may have been the best conference

One of the worst was 2015 Bama who beat a horrendously offensive challenged MSU and who underperformed defensively against Clemson.

I'd say that Pac 10 was the best conference then. That was back when even mediocre to bad teams like UCLA, Oregon, and Stanford had NFL QBs and skill players such Maurice Drew (MJD), Kellen Clemens, and Trent Edwards, and USC was the championship game for every team.
The Big 12 was extremely good before then back when OU, Neb, Col, KState, Tex, A&M etc all played NFL quality defense, but that mid 2000s range was when the Big 12 started becoming the joke that it is today with its spread offenses letting laughable teams like Texas Tech and Oklahoma State compete.

Ironically, FSU's fatigue on defense probably helped them win. If anyone on their D had enough gas in the tank to make a shoelace tackle on Tre Mason, Auburn would've still been poised enough to eventually score, but with much less time on the clock. Their D was grabbing air in the 4th quarter, so I have little doubt Auburn would've punched it in a few plays later.

Last year's Alabama team was very good, but the committee were fools to put in Michigan State, clearly mediocre, and Oklahoma, very overrated instead of Ohio State and Stanford. If you plug in the metrics and see that Ohio State and Stanford would give Alabama and Clemson much better games if not beat them, then why plug in those soft teams MSU and OU? Worst job the committee's done so far.

Auburn would have crushed Oklahoma, and USC/AU might have gone down as one of the biggest college games in history. From a statiscal perspective Auburn had the #5 ranked defense in the country in 2004 and #5 YPPA offense. USC had the #6 defense and the #8 YPPA offense.
The NFL thought 2004 Auburn was very good. #2, #5, #10, #25 first round draft picks.
