And why wouldn't they be? They invented mustard and put found out how awesome it tasted on pig.

quote:

Mustard is one of the world’s oldest condiments. In the late 4th to early 5th century, the Romans were combining a mixture of ground mustard, pepper, caraway, lovage, grilled coriander seeds, dill, celery, thyme, oregano, onion, honey, vinegar, fish sauce, and oil, to be used as a glaze for wild boar.

Mustard. The Kind of Condiments....

That looks delicious, but no, Carolina cannot hold a candle to Texas BBQ. Sorry

I've always heard that mustard-based BBQ sauces originated in South Carolina and migrated westward in pockets. The Columbus, GA - Auburn, AL area has traditionally favored a vinegar-mustard based sauce that's not at all sweet. Other styles of BBQ and different sauce styles are pretty prevalent now though.

Pork BBQ is better than beef BBQ. Vinegar based is better than mustard based. Carolina had my heart when I discovered a burger topped with pulled pork and cole slaw.

Texas fricks up chili. They aren’t creative at all. Just meat, packet of seasoning and masa. I roast at least 5 peppers and dice them up. Texans are lazy af with their chili. Might as well be hormel

Georgia bbq styles are the most manic and contested in the country. Recipes change and are hated and loved with in county lines, create family rivalries.

Mustard, Vinegar, Sweet all styles of georgia bbq. Brunswick stew recipes also all over the board and highly contested

Yeah, for me personally, if someone is dishing out good BBQ, I don't really care what sauce is on it if the meat is cooked properly.

Smoky, spicy, sweet, even no sauce — I'll probably eat it.

Having some variety is actually pretty nice, IMO.

Most edible BBQ in Georgia -- and there are some good places in metro Atlanta -- is made by people who moved there from elsewhere.

Actually, I live in Georgia. You native Georgian try to cover up your poorly cooked pork with soured ketchup. My wife and I stopped in an old BBQ joint north of Duluth once and she got the ribs. They were so bad, we took them home for the dog, but the dog wouldn't eat them either -- and this place was full of dawg fans.
