I suppose y'all are talking about sauces. What you do to prepare it way before it touches a sauce is more important than the sauce itself. I did a brisket the other day with salt and pepper only and caught the drippings in a pan. Refrigerated the drippings, scraped off the fat layer, warmed up the remains. Incredible au jus.

ETA - oh and with left overs. I made a white Alabama bbq sauce and used a ciabatta roll. Damn!

BBQ is so regional and I get brisket is king in tx. Hell, I love a good brisket. But, almost every BBQ joint I've been to in TX and OK also serve pork. A lot of southeast BBQ joint do not serve brisket. So to start with the "gay" shite about pork shows your regional ignorance.

Troof. Pork is the undisputed king of BBQ meats.


I like brisket, but you can't beat pulled pork BBQ with WNC sauce and some good ol' SC hash and rice.

If you can't love mustard base as much as you love brisket and vinegar base and white sauce and so on then you don't love BBQ. You love one thing that falls into the BBQ classification.

Same goes for Brunswick stew, hash, chicken, pork. You gotta at least appreciate all of it

Scott's Bar-B-Que in Hemingway, SC wins the BBQ Final Four going away. Open pit, whole hog BBQ cooked low and slow. Vinegar and pepper based sauce is the real deal. It's simple, well executed, and damn good BBQ and unless they started selling hot dogs, you won't find any mustard there.

Scott's is good but I have had better elsewhere in the state.

Most SC BBQ places are buffets. SC has multiple BBQ styles in different parts of the state. The hash varies the most.

Pork > Beef

Mustard or Vigegar>>>>>>Ketchup based sauce

Roll and rice. That looks more like a southern homestyle Paula Dean type plate than something from a BBQ joint.

I like BBQ. Slaw. Hushpuppies. Hash and Rice.

But when it comes to ribs, I think beef is far, far superior to pork.

Though I do like a mustard based sauce on them (but prefer the NC style for pork BBQ).

Worst thing about beef ribs though, is you practically have to take out a loan to buy enough to feed a hungry crowd.

The trained eye is about presentation. Those might taste great - looks like puke on rice. Not at all sure what the green shite on the right in pic one is. That has to be north of Mason-Dixon

Yes, seriously, and the stuff is pretty damn good. I prefer brisket in Texas or pork ribs in Memphis, and that's OK! We don't all have to be the same.
