Beef is great for steaks but if BBQ is not pork then it just sucks. Sorry no arguments accepted.

That is what I thought until I moved to Texas.

this list is garbage... the best Q as professionals know it is whatever state i am in.
BBQ is pork cooked low and slow
Brisket is in the smoked meats category and preferably a category of its own because i smoke a beef roast quite regular and turn it into barbacoa nachos. That isn't Q that is smoked beef roast.

In all honesty I'd like to try a really good beef brisket. Every one that I have ever eaten has been dry and didn't have a very good flavor. I'm sure it's good if it's done right.

it is delicious if done right. BUT, it ain't that easy to find places that do it right. most cook it too fast and it is dry. but, after years of searching I have found 2 or 3 places that know what they are doing (here locally). now, if I go west to the central tejas area there are quite a few that know how to do brisket and indeed do it right. part of that is selling it till you run out and not selling the left overs tomorrow (which many places do).

Hour and a half. There's no easy way to get to Hemingway from just about anywhere. I'm about 30 miles away and I go as often as possible.

My cousin lives in Charleston and I'll probably visit sometime this fall. Thought I might try it out. I'm not scared to be proven wrong when it comes to good food.

Never had Q from South Carolina, is it that vinegar based trash like in NC?

Love how fareplay answered "yes" to this as if he is qualified to speak for us South Carolinians.

While you can find vinegar and ketchup based bbq here, the majority of it is sweet mustard based and it is delicious. And of course, it is pulled pork as all true Southern bbq is.
