But brisket isn't barbecue
I have to disagree with this. I love pork and brisket equally, but it's actually more challenging to do a good brisket because the meat is tougher. Pulled pork is about the easiest thing to make. Pork ribs are pretty hard to frick up too. Brisket is usually an all night cook.

I like shrimp and I like grits, but I've never been all that impressed with shrimp & grits.
Then I suggest you go try some from Luke in New Orleans. John Besh has perfected it.

No chitlins, hog head souse, or hog maws in the south?
List is shite.

quote:barbeque is any slab of meat slow cooked for several hours. Brisket Is just as "bbq" as any because it takes at least 12 hours to be done right. You can't rush it or it's just gonna be too tough. Even chicken can be bbq if it's smoked for several hours. However "grilling" is not bbq. Nothing is more ridiculous than a full grown man saying he's having a "barbeque" and has nothing but burgers, hot dogs, and other grilled meats.
But brisket isn't barbecue."

2. South Carolina - shrimp and grits
Can't go wrong with shrimp and grits. Especially with some nice Andouille sausage and tasso gravy.

Ribs, brisket and catfish way too fricking low. All are easily top 10.

Cali is the worst. Their version of BBQ is to boil the ribs and then slather them with BBQ sauce.
Never once had that. Tri-tip and carne asada son.

Peach Cobbler for Georgia is easily the laziest choice in that list. Our top food commodity is the peanut and we're the home of Coca-Cola. frick, how about "Salted Peanuts in a Glass Bottle of Coca-Cola" - there's your winner. Or, as we're home to Chickfila, how bout a fried chicken biscuit. My granny was making those for us when I was a kid, before anyone outside of Atlanta knew what the hell a CFA was.
