My point was that no state invented a bottom feeding fish . The fact that they ascribe fried catfish to Arkansas just kind of shows how mundane the food innovation must be up there

I enjoy brisket but just can't bring myself to like it more than pork. IMO it isn't BBQ if it isn't pork.

God knows, though, that brisket is far more BBQ than the bullshite I'm put through each Christmas when my in-laws extended family from up North insist on cooking "BBQ" with racks of lamb and pork haphazardly cooked like a hotdog or burger and drowned in a random assortment of sauce bought off the shelf at the local grocery store. It's damn near the culinary lowlight of my year.

I hear that. A coupe of times a year I have to deal with northerners or Cali people catering BBQ. Not that it's always bad... But WTF is this crap? Not BBQ.

Right? I've been telling them for years now that I'd be happy to buy a couple of racks of ribs, chop some pork, and buy some charcoal and wood chips to do it right (they've got a propane grill and a charcoal grill; obviously no smoker or anything). Hell, I even tell them I can broil it in the oven or use a crockpot if theyd prefer (not my preference but better than what they do). And every year they decline and insist that they know what they're doing (they don't). And every year they try to convince me that some Big East or ACC team or town is up there with any team or town in the SEC and every year I start drinking a little bit earlier.

This makes my heart hurt, for BBQ and lamb everywhere.

In all fairness, the lamb they clearly know how to do fairly well (a little too salted for my taste but decent enough. Calling it BBQ, though, is wrong). It's the smoked sausage and pork that is just completely mishandled that has me choking it down with any alcoholic concoction still left in the house

Sweet Jesus. I dig the beef BBQ but I really like the pork too. Depends what I'm wanting.

On pork ribs, I prefer a dry rub.

One should NEVER drown the meat in a sauce. A proper BBQ won't need sauce.

I'm itching to try that mustard/vinegar based stuff out of the Carolinas though. I may like that.

I recommend it for sure (though I tend to feel as though I'm in the minority on that). I also recommend trying an Alabama white sauce if you get the chance. It's particularly good with BBQ'd chicken (though I also like to use it as a dipping sauce for fried vegetables as well)

Definitely. When doing ribs, it's all about the rub. I'll brush on a little sauce just for a little extra oomf during the last hour of smoking but if you're going to do it right then you need to focus on the rub first and foremost and then give equal consideration to the sauce and smoke flavor thereafter.

Cali is the worst. Their version of BBQ is to boil the ribs and then slather them with BBQ sauce.
