I love Creole/Cajun food and cook it all the time, it's what I was raised on from one side on my family. The other side was all Southern/Country cooking. I also love northeastern/Yankee foods as well.




Best of both worlds. And there's some NE food I love - clam chowder, lobster, shepard's pie, etc.
Just not a sausage lover....

I know that, red meat is a treat. I mostly stick to pork or fish. Fish tacos can be great.

I don't really like the taste. I mean I will eat shrimp sometimes, especially fried.

My mom has this amazing crawfish etouffee recipe that has basically been wasted on me my entire life. I would pick around them as I ate.

My brother gets this Porkloin stuffed with shrimp/crawfish et tu fe brought up from La. fricking glorious.

Pork is actually terrible for you because our body can't break it down properly. It's a carcinogen. But I can't resist pulled pork.

Fish tacos are the best, when done right. There's nothing I'd rather have than a good fish taco. But a pulled pork taco comes close.

liver mush ... more indigenous to the Southern Appalachians. people from Philadelphia will argue they had it first and call it scrapple. their concoction has less, if any, livers at all.

NORTH Carolina - liver mush

livers/heads/cornmeal/sage/spices - made into pate' and fried

SOUTH Carolina - Hash & Rice

livers/heads/potatoes/onions/your secret rub/spice/sauce - simmered to a wet bog served over white rice

Sandlappers ... we still use all the same leftover parts. we just prepare it differently and season according to preference. ours feeds more folks too.

either is fine delicacy.
