I've got a mess of hotwings I brought home from restaurant tonight.

I've also got a cheap Kroger key lime pie.

Thinking about bypassing the blue cheese and dipping the wing into the key lime pie.

Yea I was wondering why you didn't email me. I've posted my new email address a bunch on here and figured you have seen it and would connect the dots, should've known better from a saint's fan.

well played...I did a bacon wrapped chicken (stuffed with cream cheese and seasoning) tonight. Forgot to take pictures...was one of the best I've ever done...fine line between over doing the chicken and not cooking the bacon enough, also not cooking off the cream cheese filling. Was actually my best of that tonight. Wife putting the 4 month old down for the evening and she still singing the praises....

to wine and grilling

Got both grills fired up. I'll sear the tri tip then put it on weber until it's done. I'll just sear the ny strip on the Akorn. Bout 90 seconds a side. Covered the strip in salt for about an hour then washed it all of and put some seasoning on it. Bout to throw both of em on.

The salt absorbs into the meat opening the pores and given the salt flavor from the water that comes to grab the salt then recedes....

patting dry before cooking allows the meat to adhere to the grill and cook thoroughly
