In split, I would make sure you eat at Vila spiza. Small family restaurant with a menu that's always changing based on what's in season and available that day.

It's located within diocletians palace just north of the center.

I really enjoy Korcula but it would be hard with your itinerary to get there without losing too much time.

I'd also make it a point to find a good peka, which is slow cooked meat or squid filled with potatoes and lots of olive oil that's cooked in a cast iron pot.
