For the record Pastalaya was invented by a local Jambalaya cook the late Mr. Rogers Melancon,some gumps at a NASCAR race wanted to try pasta they were buying all the ingredients so he did it the result was overwhelming.He brought the dish to Ascension Parish and the rest is history.
