If you are flying into San Jose do not hit afternoon traffic that is all. We went in October on a surfing trip and man ole man traffic sucks. Other than that we had a great time in Playa Hermosa and Jaco.

Presuming you're getting a transfer from the airport to the hotel/resort, go ahead and ask the driver to stop for beer for the ride. He'll probably actually suggest it.
Not sure how outdoorsy you are, but even non athletic types seemed to enjoy the obligatory ziplining in the jungle.
I think our resort was in the area of Puntarenas, but as it was a honeymoon we didn't do a lot activities off resort.
