Both ... grits on the side in a bowl, (unless you are doing sunny-side-up or over-easy eggs then they go on the same plate and the hash-browns go on a large side plate if you're doing it right.).

The hash-browns comes in a thousand different ways, scattered-covered-smothered-chunked-diced-peppered-capped and topped ... or, you could just do it the yankee way and say "all the way." If you want gravy on them say "Southern country too please maim," and they'll put some sausage biscuit gravy on top.

After that you order your waffle and steak.

I LOVE grits so I wasn't downing them. However, the reason I'd advise a non-grits initiate to stay away from restaurant grits is for two reasons 1. you don't know what you'll get 2. you don't know how to properly eat/season grits if you don't have an aficionado with you and one bad experience can turn folks away permanently (hard to get them try it again). Those kind of grits are where that stereotype comes from.

Same with okra - I've heard outsiders say it's the most awful thing ever and describe it as nasty. Those folks are getting non-southern style okra and it's tainting them and causing them to stereotype it. Okra is one of my most favorite things in the world but we don't cook them like the descriptions I've heard from those who hate it after trying it.

How to cure your Waffle House habit: Watch the cook. Look for runny sores. Check out the rag hanging from his belt. Note he never washes his hands. Check the establishment's health scores.

I buy it by the case - it lasts forever and it makes anything taste good. It'll be great post SHTF when you need to make the possum or dog taste better.

Besides, what I've always liked about it ... that bad arse rooster on the label.
