Both are extremely good and I'll eat either depending on the day. I do like beef most is Texas and pork from Memphis (also hear SC has really good pork) Texas just has the best of both worlds.

I agree that brisket is harder to do right. But, done right, it beats the hell out of any pork.

I'll say this for the Arkansas BBQ that I've had...it's light years better then South Carolina BBQ. They actually put mustard on their BBQ in that state. It is obscene. Between that and boiled peanuts, one has all the evidence one needs to conclude that that state is a collection of seriously disturbed palates.

I have had some very, very good BBQ in Arkansas.

Oh they are nasty as hell but so good. I guess I like them because my grandpa ate them all the time when I was a kid (he is from GA). They are kind of hard to get around Houston/Galveston, so I'm forced to get the canned ones... still delicious.

BTW, I love brisket too, I was raised on pork BBQ (little Rock is pretty much Memphis light) and thats what I like to smoke. Arkansas is very diversified when it comes to BBQ. We are surrounded by cities and states that claim different styles of Q. Texas, Memphis, KC, St. Louis. Its all frickin good.
