As for the name, legend tells it goes back to a different age and time when cotton was king and a native state son would go on to be the King in the US of A. My late great grandmother - born in the 1800's - was nearing the end of her life when this young man was just rising to national prominence and even she loved Elvis.

Young Elvis wanted to make a film about his birth state and was going to honor a childhood friend who later attended State but died young in a tragic catfish accident. Sadly his idea was changed by a foreigner who called himself a colonel and a tennessee based mafia. The original product, Viva Starkville, about the dangers of competition (drinking, boating and fishing) of underage southern men was reworked by folks in California who just wanted to sell sex.

The boat was replaced by a car race and fishing was replaced by sexy women. Only Ann Margret's swimming ability was carried from the original story and tragedy was replaced by a great set of lungs. A buddy story worthy of Shawshank Redemption was replaced with the boy / girl storyline of modern chick flicks. The story was retitled Viva Las Vegas and went on to make about 10 million at the box office which was pretty good for the early 60's. While this story was lost to modern media Elvis would remind his TN mafia friends about the original storyline by shouting VIVA STARK VEGAS randomly after a round of late night partying, dope, and booze.

Like Rosebud in Citizens Kane it is rumored to be the last thing Elvis yelled when on the crapper and sadly he died. Since the folks around him were aware of the SEC and the underdog status of State they would yell it when watching SEC football games as a tribute to the fallen King. Eventually the VIVA was dropped and STARK VEGAS was morphed into StarkVegas. As Paul Harvey used to say.
