I got 6 lbs of ground elk (buck & doe), 2 loins and 2 back straps. And Mrs ABears won't eat anything resembling to Bambi's

Sup this weekend fam?

Friday: 18 with the boss
Saturday: attempting to shoot Bambi; bourbon
Sunday: potentially early AM mass; if not, a quick 18; my famous red beans and rice*




* - IDGAF if it's not Monday. One big pot of red beans is lunch and dinner from Sunday to Wednesday.

I'm good for anything on Friday... Saturday I'll be at krewe du vieux... and Sunday I should be good for anything but nothing late night, got work Monday morning

Small plates and beer tasting at a local brewery on Friday night with SO and her folks.

Gym Saturday morning or run on a local rails-to-trails. Mardi Gras party Saturday night. Driver secured and drinks start at 5:00 p.m. Should be interesting. Had to buy a white (ivory) dinner jacket for the theme. Jukin'. DownSouth Jukin'. Trying to decide whether to shave my beard for it, when past practice and tradition has been shaving it on Valentine's Day.

Mass Sunday morning if possible, but probably Sunday afternoon, and work on Sunday (my work is an evil mistress and she unfortunately disregards the Lord's Day).

I am going to chill Friday, Breakfast with my buddy at his club Saturday AM (TA knows who my buddy is...hope to get inside info) followed with target practice with clients and grilling some dry aged ribeyes. Sunday I haven't about clue.....no fo

I think I'm about to start doing some dry aging here in nola... I'm gonna buy a wine cooler and get an external temp regulator so not only can I dry age with it, I can use it to brew beer as well

Yep. You can do that but need to be able to regulate the humidity. Need about 70% humidity and a temp between 35-40 degrees. Don't go over 45 days (my sweet spot is 35 days) and you have to be able to buy primal cuts (bone-in with a large fat cap).

Oh my.... that looks awesome!

One thing I want to do after grad school and get settled down is have a separate part of my house/shed/etc dedicated to strictly cooking... have a brick oven (or something like that), grill, giant stainless steel table for butchering, somewhere to dry age, smoker, etc. that uuni would be perfect for that haha

I was gonna come down for Krewe but I need to save some $$$.

It's not my favorite parade anyways. I despise the Quarter after dark, except for an occasional Pat O's or One-Eyed Jack's trip.

I was right! We're staying at the Dauphine this weekend. The wife has some Doctor conference she's presenting at and we decided to make a trip out of it with her parents and her sister and her husband.

So...we'll probably be around.
