I am guessing that Evan Stone is not an option?

Evan was actually the correct answer.

Is it 2006 again?

I've got an older bulky one, the ANOVA wasn't out yet. It's just not worth the hassle to me.

Anybody who cures and smokes their own bacon is cool in my book. I did it once last year, and it was by far the best bacon ive ever had. I need to find a good spot here in Jackson to get some meat

If you find it let me know. So far the best place to get meat is Whole Foods but they charge out the arse. They bring in whole rib loins to dry age there but want to charge case prices. As for specialty cuts like pork belly I have no idea. Thus why I go to Porcellino's up in Memphis (it is owned by the same guys that own Andrew Michael's and is right across the street next to Hog & Hominey)

The old ones were a pain in the arse and expensive. The ANOVA looks like a big dildo that clamps on the side of a stock pot. Super easy to hook up and take down. Plus the app has a ton of recipes and tells you exactly how long & what temp you need to cook anything.

The head butcher, Aaron, is a great guy. Former Marine and takes pride in what he does. His butters and spices are great along with his sausages (the chorizo is awesome)

That is absolutely, 110% false.

PJs doesn't have 60% of the bourbon selection Kiamie's does.
