We don't grade our meat.

Yeah we age whole ribeyes for clients and sell fresh.

I've got some pictures of our bone in's if I can find them. Lemme look.

Nah. Shop outside of town in Sherman.

That's one of the girls who work in the store. They were helping weigh the meat. I wear tennis shoes or crocs if I know I'm not doing crazy amount of work.

Only reason I like the crocs is I can wash off the blood easier.

That tells me you have a compensation problem. There isn't a bigger compensation steak than a T-Bone.

That's the one. I don't work meat counter much now that school is back but weekends and summer I cut the majority of the meat. Us and Neon Pig are the only two "real butcher shops" that I know around here.

I like a good sirloin or a ribeye.

T-Bone's are good, but it's like owning a big, beefed up truck that's loud as hell.

Got to love a good bone-in ribeye. About 2 inches thick, cooked via sous vie and then finished off on a super hot grill to put that steak house char.....finish it with a heavy tab of European butter as the meat rests.....freak'in incredible!

I use to stop by Redline several times a week back when I worked in Ripley, lived in Tupelo, and was a bachelor (which allowed me to grill 4-5 times a week).

bbq-brethren is a good place to hangout for grilling ideas.

Haven't tried sous vie yet, but have gone far enough to putting equipment in my amazon cart, just haven't clicked purchase yet.
