Brisket is king.

BUT,

Regarding pork ribs, do yall prefer a dry rub or wet sauce?

I give the nod to a dry rub.

Obviously between pork and beef. The answer is obvious. But I'll give Texas credit on their sausage. When it's smoked sausage I prefer beef over pork. It just taste leaner and has a great flavor.

Though while I enjoyed beef ribs, pork ribs are better.

TN BBQ all the way. Texans can't BBQ for shite. It is all smoke all the time. If I wanted to eat charcoal I would buy a bag of Kingsford.

I'm more a fan of TN/Carolina style BBQ. I have family, wife and in-laws, and friends that talk TX BBQ up like it's legal crack. (According to them, especially the mother-in-law Texas invented BBQ, beer, football, America, Jesus,....etc.) Although it's good, I have yet to have anything that lives up to the hype. Maybe I'm just biased because I grew up on pork BBQ rather than beef BBQ but I prefer the sweetness of pork. Honestly though, good BBQ is good BBQ no matter where it's from.

Yup

Figures an aggie would throw his 2 pesos in. Not that they mean much. Like I have said ad nauseum, Texans can't BBQ for shite. They can smoke meat poles, and beef chunks all day long, but that is it.

I'm going with "neither". Brisket in Texas is outstanding, and so are pork ribs in Memphis. Comparing the two is like putting good catfish against fresh grouper: it makes no sense. We don't have to rank every damn thing.
