Snake is somewhat commonly eaten where I'm from. There's even a rattlesnake rodeo near my hometown with a variety of snake meat dishes to go along with the events.

As far as game goes, it's good but doesn't approach fresh rabbit, venison, or gator.

In sweetwater tx they have a rattlesnake round up w 1000s of the suckers. It is like chicken in that it doesn't have a ton of taste but good lord is it tender.

It makes delicious sausage, but de boning it isn't worth the hassle. Very lean mean.
