I will eat anything. No joke, I will try anything (ie. pill poop).
So far I've eaten:
Shark
Gator
Turtle (turtle stew)
Buffalo
Rabbit (wonderful in a pot pie)
Squirrel (excellent)
Pheasant
Quail (top 5 meat)
Octopus
Emu
Venison
Haggis
Snail
Crawfish
Oyster (oyster stew is my favorite meal)
Goldfish (frat party)
Grasshopper (I know...insect isn't meat)
Ant
Rattlesnake (wonderful)
Duck (wasn't impressed)
Mussels
Deer
Lamb (didn't like lamb)
I know I'm missing more, but that's a good enough list for this thread.
ETA: Cow brains with cheese and wine (at a winery). Odd experience.

Mountain Goat is tough as a shingle. But nicely flavored.
Beaver is tasty.
Caribou is a lot like venison. I can take it or leave it.
Black Bear CAN be good, but tends to be greasy.
Dall Sheep is delicious and probably my favorite AK meat.
Moose is like lean beef.
