I've had black pudding and it's fine. Polish blood soup is awful though.

Whatever they put into the food they cook in small towns in Louisiana. I don't ask and don't want to know. Plus emu, rattlesnake, etc

I had some boudin one time that they refused to tell me what it was. I'm guessing squirrel, possum, or armadillo

Conch (in a corn fritter with key lime dipping sauce ) and Gator are probably the most exotic for me.

It was probably nutria.
It's apparently pretty good meat. I'm just waiting for some restaurant in New Orleans to start serving it and have it get popular with all the foodies.

Buffalo in places like Montana is pretty common too. You can get a buffalo burger in most restaurants.

Bison burgers are pretty popular here in some more upscale eateries. Our local Whole Foods and Rainbow Blossom carries them too. For some reason I've just never tried them.

Possum. years ago I had a customer who lived and worked in Greenwood SC. He used to think it was hilarious to take us city slicker salespeople to lunch at a local eatery that sold Possum. He'd insist that we try it.. so I did.

Then I'll say more. They hunt a bunch of different kinds of monkeys for food down there. I believe I ate a red howler monkey. They put it in a type of casserole so it would be a bit more palatable.
